Breakfast Muesli Here's one of my favorite breakfasts, based on the swiss oatmeal at The Corner Bakery. 1 6 oz. container of vanilla yogurt (I use Kroger carb master, which is 60 calories) 1/4 cup Bob's Red Mill brand muesli (110 calories) 1/2 chopped apple (about 35 calories) Mix all three ingredients together and refrigerate overnight. This lets the oats and grains in the muesli soften. Yum!

CORRECTION on calories for above recipe: Per MyFitnessPal, caloriesshould be324 as they assigned calories to the spices. The other calorie counting recipe builder I used to use had those spices as 0 calories.

Pico De Gallo ... errr ... Homemade Salsa! When I was at Target a few years ago I came across this most delicious Salsa that they make fresh daily - they called it Pico De Gallo. I can't drive up to Target as often as I like - so this week I decided to make my OWN FRESH version. Thought I'd share with you all here. 1 Cup Diced Tomatoes 1 Cup Diced Red Onion 1 Cup Diced Bell Peppers 2 Diced Jalepeno - remove the seeds for mild flavor 1/4 Cup Diced Fresh Cliantro 1 Clove minced Garlic Salt To Taste Juice from 1 Lime. Basically mix everything into a large bowl, refrigerate for 1 hour to blend the flavors. Serve! To save time - and if your gocery store does this - you can get the pre-chopped veggies and herbs. Use within a few days - as you would any regular salsa.

Crock Pot Buffalo Chicken Here's one of my favorite things to make: 3 lbs boneless skinless chicken breast, 1 packet of Hidden Valley Ranch dry dressing mix, 12 oz bottle of buffalo wing sauce (I like the Franks Wing Sauce), 2 T light butter (I've made it without this and it turns out great!) Place chicken in crock pot, pour in bottle of wing sauce, and top with ranch dressing mix. Cook on low (covered) for 7 - 9 hours.Shred chicken using 2 forks. Add butter (optional) and let cook for anotherhour to let chicken soak up sauce. Serve any way (withtortilla chips, on a bun,on a salad....) makes approx 12 -1/2 cupservings.Approx 175 calories (with butter)
